Our Maple Syrup FAQ's
Q. What makes the 4 different grades of maple syrup? (Golden, Amber, Dark, and Very Dark)
A. The different grades identify the colour and flavour intensity, not the quality of our maple syrup. Golden syrup is the lightest in colour and has the most delicate taste (great for canning peaches or ice cream topping), while Very Dark syrup is the darkest and most robust in its maple flavour (excellent for use in cooking or in BBQ sauce).
The grade depends on when the sap was harvested. Early season sap yields the lighter, more delicate syrup, while late-season sap produces darker, more robust syrup.

Q. Do I need to keep maple syrup refrigerated after opening?
A. Yes, you do. Your maple syrup will come to you in a sealed container which is shelf stable indefinitely. However, once the seal is broken, it does need to be kept refrigerated to prevent it from moulding or fermenting.
